Under the supervision of chef Angie Mar the kitchen is dedicated to meat, meat, and more meat, some of it featured in novel compositions. There's an English-style game pie with a tallow crust - a marrow bone protrudes from the top - and a pork shoulder lovingly braised in milk. Even the desserts feature things like foie gras and bone marrow.
